TRIED 'N' TRUE: Cream puffs are easier to make than you think

TERRE HAUTE — When our boys were young they liked cream puffs. I wanted to make some, but they looked so hard to do. Stan took us out to eat on Father’s Day and on the buffet they had small cream puffs. I asked him if he remembered when I used to make those. He didn’t, and I thought how sad. The other two boys did. So I looked up my recipe so I could share. Don’t be afraid to try them; they are so simple.

 I make a custard filling, where most of the ones you buy have cream or whipped insides. You can use a small plastic bag to fill. Cut a small hole in one corner or cut the puffs in half and fill, whatever is the easiest for you. Hope you try these.

Cream Puffs

1⁄2 cup milk

1⁄4 cup butter

1⁄2 cup flour

1⁄8 teaspoon salt

2 eggs

Whipped cream or pastry custard

n Heat milk and butter together to the boiling point.

n Add the flour and salt; stir and cook batter until it leaves the sides of the pan and forms a ball.

n Remove from the heat.

n Beat in the eggs one at a time, beating after each addition until the mixture is smooth.

n Place teaspoons full of the batter on a greased cookie sheet, heaping each toward the center. Allow two inches between puffs.

n Bake at 375 degrees for 20 minutes. Reduce heat to 275 degrees and bake five minutes longer.

n Test the puffs by removing one from the oven; if it does not fall, it is done.

n Cool.

n Cut cool puffs open half-way and fill with chilled pastry custard, whipped cream or ice cream.

Sprinkle with fruit or chocolate sauce if desired. Makes 24 small puffs or 12 large puffs.

Pastry Custard (for Puffs)

1⁄3 cup sugar (or sweetener)

1⁄4 cup flour

2  cups scalded milk

3 eggs

1 teaspoon vanilla

n Mix sugar, flour and eggs to blend.

n Add hot milk gradually.

n Cook in a double boiler or heavy saucepan, stirring often.

n When custard thickens remove from the stove and add vanilla.

n Chill thoroughly before filling cream puffs.

NOTE: Now I add sugar free instant pudding. Your choice of flavors.
