Culinary school instructs in ‘Christmas delicacies’

TERRE HAUTE — The warm and gooey baklava didn’t lie in its wrappers for long Saturday morning.

Dozens participated in the Clabber Girl culinary course featuring holiday “Christmas delicacies” inside the facility’s kitchen classroom. Meanwhile, the Hulman Co. building at North Ninth Street and Wabash Avenue was packed with families for Country Christmas festivities.

Sisters Maureen Freeman and Ann Sullivan were guest instructors Saturday, teaching classes how to prepare the traditional English dessert “Sticky Toffee Pudding Cupcakes” and baklava.

“I think Clabber Girl got us involved in this by offering us the use of their kitchen,” said Freeman, director of the White Violet Center at St. Mary-of-the-Woods. “It’s a great opportunity to get out of the woods and into the city,” she laughed while stirring homemade toffee glaze.

Sullivan, foundress of the White Violet Center and a theology instructor at the college, was answering questions and moving the class toward a finished product.

“We try to get a lot of local guest instructors,” Clabber Girl culinary director April Osburn explained, “whether they work in a restaurant or are culinary enthusiasts,”

In addition to producing world-class food products ranging from Clabber Girl Baking Powder to Rex Coffee, the facility features a full-service culinary school, offering a wide range of classes to individuals and community groups.

In addition to special guest-instructors, Osburn said the school features in-house teachers, many of whom work professionally in experimental food production at Clabber Girl.

Osburn herself was behind the classroom’s open seating area, back in the kitchen, stirring a mixture that would become a breakfast casserole for the Clabber Girl employee Christmas party today. The facility offers tours and group classes, with a variety of packages tailored to fit any interest or experience level, she said.

“We also do catering,” she added, describing anything from small wedding receptions to cocktail parties.

“My favorite to teach are the dessert classes,” Osburn said. “I’m a baker by trade.”

Holiday cookie classes will be on schedule this week, and the school offers a four-week summer camp for children.

“This summer we did cake decorating for a week,” she said, adding “Cuisine Around the World” and “Fun with Food” to other courses offered to children. The latter course involves decorative garnishes and science-related games involving corn starch and water mixtures.

The culinary facility is also readying to host a high school chef competition, a tournament where local food classes battle for bragging rights in cooking competition. Certification from the Kansas City Barbecue Society will also be granted at a course in February.
