HISTORICAL TREASURE: Memories baked from scratch

On my Historical Treasure hunt, I was drawn to a pasteboard barrel 28 inches high and 18.5 inches across with the words “Calumet Baking Powder Bakes Best, Received Highest Award” on one side and “Calumet Baking Powder Always Pleases, Try It” on the other. It reminded me of the time my high school home ec teacher gave us the assignment of preparing breakfast for the family. My meal of tomato juice, sausage, scrambled eggs and baking powder biscuits turned out so well my father bragged about his “educated breakfast.”

It takes a good double-acting baking powder like Calumet to produce light, high-rise biscuits. Its first action comes from some kind of acid which works on the wet mixture before it is placed in the oven. The second rising action comes from the oven’s heat as the product is baking. Calumet’s contents are sodium aluminum sulfate and the acid ingredients of sodium aluminum sulfate and calcium phosphate.

The Calumet Baking Powder Co. was established in Chicago in 1889 by William Monroe Wright and was later sold to General Foods, which merged with Kraft in 1990. Calumet is still one of the leading brands of baking powder.

To stir up some baked-from-scratch memories, see the Calumet Baking Powder barrel in the Museum’s general store on the lower level. It was donated by Patricia Breault, who stated that it had been in her grandfather’s grocery store in Evansville and that it had been stored in her parents’ attic.
