For a long time I didn’t know much about eggplant. All I knew was to fry it like I did zucchini. My sister, Pam, gave me this recipe. It takes one large eggplant. I’ve had this about 30 years. I think she got it from her mother-in-law at the time. I do know my boys used to like eggplant.
Eggplant
• Peel and cook one large eggplant, boil until tender.
• Drain.
• Mix together
1 teaspoon celery salt
1⁄2 onion
1 egg, beaten
1 tablespoon butter
1⁄2 cup bread crumbs
1 tablespoon parsley
Salt and pepper to taste
• Mix together.
• Mash eggplant and add rest of the ingredients.
• Put oil into skillet.
• Put small amount eggplant into pan and fry until golden brown on both sides.
• Drain on paper towel.
