Although Thanksgiving is only 10 days away, there’s still time to consider serving something different.
If you have family and friends coming in for breakfast, try these pancakes with a twist. It comes from a book that is so old, the staple on the pages has rusted — but the recipes are still good.
This recipe comes from the Circleville Pumpkin Show, “the longest free show in the world.” All of the recipes have pumpkin as the main ingredient. Here is just one of them.
Top O’ The Morning Pumpkin Pancakes
2 cups flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon allspice
1-1/2 cups milk
1 cup pumpkin (can or fresh)
4 eggs, separated
1/4 cup butter, melted
1 cup apple cider
1 cup maple flavored syrup
• Sift together dry ingredients.
• Add milk, pumpkin, egg yolks, and melted butter to dry ingredients and stir until just blended.
• Beat egg whites until stiff and fold into batter.
• Using a 1/4-cup measuring cup pour batter onto hot griddle.
• Spread batter slightly.
• Turn when bubbly on top and brown on bottom.
• Mix cider and syrup and simmer uncovered 15 minutes to thicken.
Serve warm over warm pancakes.

You know how the old recipes were — butter the size of an egg, pinch and a dab (also my all-time favorite), add flour by the handful. This original apple recipe came from Gene’s aunt, Ginnie Myles. I add sweetener so Gene can enjoy these also.
