I belonged to Extension Homemakers when I was younger and the boys were home.
As a new wife and mother, I learned a lot and acquired some good recipes through the service.
As a lot of you know, I love muffins.
This being the season of pumpkins and apples, why not make muffins using both?
Pumpkin, Apple Streusel Muffins
2-1/2 cups flour
2 cups sugar
1 tablespoon pumpkin pie spice
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs, slightly beaten
1 cup pumpkin
1/2 cup vegetable oil
2 cups peeled, finely chopped apples
• Combine together first five ingredients and set aside.
• Combine eggs, pumpkin and oil.
• Add to dry ingredients and stir just until moistened.
• Stir in apples.
• Spoon batter into greased or paper lined muffing cups, filling three-fourths full.
• Sprinkle streusel topping over batter.
• Bake at 350 degrees for about 35 to 40 minutes or until toothpick comes out clean.
Streusel Topping
2 tablespoons flour
1/4 cup sugar
1/2 teaspoon cinnamon
4 teaspoons margarine,
• Combine flour, sugar, cinnamon.
• Cut margarine in until crumbly.
