TERRE HAUTE — I’m on the Burnsides Nursing Home Guild. We used to take some of the residents up to Paris, Ill., to meet with other patients and we always took dessert and drinks.
After an afternoon of games, we had a good fellowship time with dessert. We took this cake a lot. They really enjoyed it. It is a very easy and good cake. I revamped the frosting by adding pineapple.
Pineapple and
Mandarin Orange Cake
1 box white or yellow cake mix
4 eggs
1/2 cup oil
1 small can mandarin oranges, reserve juice
• Mix well.
• Put into a sprayed 9- by 13-inch pan.
• Bake until done, about 20 to 25 minutes.
Frosting
8-ounce container frozen whipped topping, thawed
1 small box instant French vanilla pudding
1 can crushed pineapple
• Mix all together and spread on cooled cake.
Note: Store leftovers in refrigerator.
