When we lived in the Oilfield area north of Casey, Ill., I had such a wonderful time with two great women — Eathel and Lola Redman. They liked to play cards and I was always busy with the boys. Sometimes if it was close to supper time, Eathel would bring chicken casserole for supper. Lola would bring dessert. The boys really enjoyed it.
Sally Weaver gave me the recipe for her mother’s chicken casserole. It would be great for Valentine’s Day. It’s so easy to make. Thanks, Sally.
Eathel’s Scalloped Chicken
2 cups Creamettes (raw)
1 cup milk
1 cup chicken broth (or more)
1 small onion, chopped
1/2 pound Velvetta cheese
3 hard-boiled eggs
2 1/2 cups cut-up chicken
1 can button mushrooms
n Mix and place in a 9-by-13-inch pan sprayed with nonstick coating; refrigerate overnight.
n Cover with buttered bread crumbs* and bake at 350 degrees for one hour.
* Melt some butter and drizzle over crumbs.
