TRIED 'N' TRUE: An easy recipe for a busy time of year

TERRE HAUTE — This recipe is real easy for this busy time.

With all the fresh vegetables coming from your garden or from someone else’s garden all at once, this recipe can help you use whatever extra you have.

Have fun with this recipe. Try it first as it is written.

Then add green, red or yellow peppers and tomatoes. Also, you can use from mild to extra hot green chilies.

Squash and Corn Dish

1 tablespoon butter

1 small onion, cut into thin wedges

2 teaspoons finely chopped fresh garlic

3 cups zucchini and/or yellow squash, sliced

1⁄4 teaspoon salt

1 cup whole kernel corn, frozen or fresh

1 4-ounce can chopped green chilies

• In a large skillet, melt butter until sizzling, add onions and garlic.

• Cook over medium-high heat about one minute. Reduce heat to medium.

• Add zucchini and salt; cook stirring occasionally, four minutes.

• Add corn and chilies; continue cooking until vegetables are tender — about seven to 10 minutes.

• Add pepper to taste.
