TRIED ā€˜N’ TRUE: Simple, but good lemon cookies

TERRE HAUTE — When our youngest son, Stanley, was in first grade, the teacher was always having the kids do some kind of cooking (with help). They made mostly cookies, where they could use their hands. Then they each got to take home some cookies to give to mom or dad. The following is one recipe that she did with only three ingredients.

I overlooked the recipe for a while. But Stan wanted to make them. So I got the ingredients and also picked up some lemon icing. You can add nuts, but they are great without them. I have made these for the nursing homes. I hope you try them. They are great.

Lemon Cookies

1 box lemon cake mix

2 cups Cool Whip

1 egg

• Mix all together. Roll into balls. Put on sprayed cookie sheet.

• Bake 350 degrees for 10 to 12 minutes. Roll in powered sugar while still warm.

NOTE: I like these with lemon icing also.
