Last week we had recipes for cake mixes. So I thought you might like one more. With cake mixes on sale you can buy several different brands and flavors. Even though this is called a bread, I call it a cake, because it is made in a cake pan and not in a loaf pan. I’ve never tried it in a loaf pan. Just haven’t had time yet. But I’m going to try a loaf pan.
Banana Nut Bread
1 yellow or banana cake mix
1 teaspoon vanilla
3 eggs
1 teaspoon cinnamon
1/2 cup oil
2 large or three small overripe bananas
1/4 cup water
1/2 to 1 cup chopped nuts
• Remove 1/2 cup dry cake mix and set aside.
• Place remaining cake mix, eggs, oil, water, vanilla and cinnamon in a large bowl and mix well.
• Cut bananas into chunks and add to batter.
• Mix until bananas are completely blended.
• With the reserved 1/2 cup dry cake mix add pecans and blend.
• Add pecan mixture to batter and stir until well blended.
• Spread batter in sprayed 9- by 13-inch pan.
• Bake at 350 degrees for 25 minutes.
