Tried 'n' True: Use up tomatoes by making this cocktail juice

West Union, Ill. — When Gene and I got married, they farmed for Lew and Virginia Dall. I always loved tomato cocktail (V8 juice). Virginia said she had a recipe for V8 juice. She would come down from Marshall to West Union and Virginia, Gene’s mom, and I would put up the juice.

When we got done with canning tomatoes, juice, catsup, etc., we always had some more tomatoes than she and I could use.

Here comes Virginia and Lew. Lew went out with the men and we three put up her tomato cocktail. Hope you enjoy this as much as we did.

Tomato

 Cocktail Juice

n Wash but do not peel tomatoes.

n Cut one gallon of tomatoes in pieces (a heaping gallon or more).

n Place in an extra large pan on the stove.

Add:

4 tablespoon sugar

2 cups water

4 small onions, quartered

*2 tablespoons salt

1⁄2 teaspoon pepper

8 whole cloves

2 sticks of celery and leaves

n Cut up and simmer for one hour or until tender.

n Stir and cool.

n Put in sieve and strain.

n Place on stove and heat.

n Then add to juice;

4 tablespoons lemon juice

4 tablespoon vinegar

n Boil two minutes and seal in hot quart jars.

*NOTE: Regulate how much salt you want. No rules that you have to use that much.
