My Aunt Eloise Nichols is a good cook, although she doesn’t cook much anymore. She gave me this recipe many, many years ago.
She now lives in Kansas. I like to think she’s here whenever I use one of her recipes.
This one is so easy. Most people will have most everything on hand. I hope you try this Pumpkin Dessert.

Great Pumpkin Dessert
1 - 15 oz. can pumpkin
1 - 12 oz. can evaporated milk
4 teaspoons pumpkin pie spice
1 1⁄2 cup chopped nuts
3 eggs
1 cup sugar
1 package yellow cake mix
3⁄4 cup margarine (melted)
• Combine pumpkin, milk, spice, eggs and sugar. Mix well. Pour into a prepared 9x13 pan. Sprinkle with dry cake mix into pan, drizzle with margarine. Top with nuts.
• Bake 350 degrees for 1 hour or until a knife inserted in center comes out clean.
• Serve with ice cream or whipped topping.
