One of my favorite cookies to make is a sugar cookie. You can do so much with it. This cookie recipe comes from Bernyce Coleman, a good friend of mine from Hutsonville, Ill. She has several different kinds. It just depends on what flavor cake mix you use. I’m going to give you two recipes this time. I’ve not tried the Peach Cobbler because I can’t have peaches. With the cookies you can add nuts, chips or candies. The kids really enjoy making these. Thanks Bernyce.
Sugar Cookies
1 cake mix
2 eggs
1/2 cup oil
1 to 11/2 cups chips, nuts or candies
• Mix above ingredients well.
• Fold in chips.
• Spray a cookie sheet.
• Drop by teaspoonfuls 2 inches apart.
• Bake at 350 degrees for 8 to 10 minutes.
Peach Cobbler
1 Jiffy cake mix
1 large can sliced peaches
11/2 tablespoon flour for thickening
1/2 cup butter
• Mix peaches with flour mixture (may be lumpy).
• Pour into a prepared 8x8 inch cake pan.
• Pour dry cake mix over peaches.
• Dot butter over cake mix.
• Bake at 350 degrees for 30 minutes.
