With strawberries in abundance now, this is a good time to try something different and something good for those with diabetes. Also, this is for anyone who is watching their weight. I don’t remember who gave this to me or if the recipe is one of mine.
I think I tried this when I was on Weight Watchers because I used Butter Beads a lot. Anyway, I enjoyed this several times.
So did my husband, Gene, and Brock Hopper, who also was a Type 1 diabetic. This doesn’t call for fresh strawberries, but I like to add them (and/or bananas).
Sugar-Free Strawberry-Banana Pie
1 package strawberry sugar-free gelatin
1 package sugar-free banana pudding
2 cups hot water
• Add together and cook until it thickens — about 5 minutes (or after it begins to boil)
1/2 package Butter Beads (optional)
• Pour into lite graham cracker crust.
• Place in refrigerator until it sets.
• Cover with lite Cool Whip. Garnish with strawberries.

I have revised this recipe to be a little bit easier for our times. You know how the old recipes were — butter the size of an egg, pinch and a dab (also my all-time favorite), add flour by the handful. This original apple recipe came from Gene’s aunt, Ginnie Myles. I add sweetener so Gene can enjoy these also.
