Well, we just got through the holidays, and guess what is coming up?
Valentine’s Day.
I always like to try and make something special for my husband, Gene, and anyone who’s extra special.
We always do something special once a month for whoever has a birthday in the month.
We have none for February. So make something special for your loved ones.
I have been asked what you can do with plums.
My friend Reta has given me a plum tree. Hopefully, I’ll get some plums next year. They have all different kinds of upside-down cakes — why not plum?
Plum Upside-Down Cake
1/3 cup margarine
1/2 cup brown sugar
2 pounds fresh plums (pitted and halved)
2 eggs
2/3 cup sugar
1 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1/3 cup hot water
1/2 teaspoon lemon extract
whipped cream (optional)
• Melt margarine in a 10-inch ovenproof pan.
• Sprinkle brown sugar over margarine.
• Arrange plum halves, cut side down in single layer over sugar, set aside.
• In a bowl, beat eggs until thick and lemon-colored.
• Gradually beat in sugar.
• Combine dry ingredients.
• Add to egg mixture and mix well.
• Blend water and lemon extract and beat into batter.
• Pour over plums.
• Bake at 350 degrees for 40 to 45 minutes.
• Immediately invert onto a serving plate.
Serve with whipped topping if desired.
