Tried 'n' True: 7-Up cake fast to make, but needs time to bake

West Union, IL — I got this recipe from Dana Eslinger, my cousin in Sullivan, in the late 1970s or early 1980s.

I made this cake several times when my boys were home but I haven’t made it in a while. I just about forgot about it.

This dessert doesn’t take many ingredients and though it’s fast to make, it takes a while to bake.

Dana used to take it to our reunion. We didn’t have much left over.

7-Up Cake

1-1/2 cups margarine or butter

3 cups sugar

5 eggs

3 cups flour

2 tablespoon lemon extract

3/4 cups 7-Up

--Cream sugar and margarine together and beat until light and fluffy.

--Add flour.

--Beat in lemon extract and 7-Up.

--Pour batter into well greased and floured large fluted mold.

--Bake at 325 degrees for 1 to 11/4 hours.

Note: You can use an angel food cake pan.
