When we lived over on the river I had a lot of fruit trees. My apple trees would produce a lot of apples. I had two trees, so had to do something with all the apples. The boys didn’t eat that much fruit so I had to come up with something I knew they would eat. This recipe took care of that, but I needed sausage. We raised hogs, so we ate a lot of pork. When I came into the Lindley family (51 years ago), my father-in-law, Randal, would bring home the meat, but didn’t have any sausages. I asked why; I guess no one liked sausage. The next Christmas he gave me a whole hog sausage (no seasoning). I like to it season it myself, and it lasts longer in the freezer.

Apple Sausage Casserole
6-8 pork sausage patties (sauté)
3 cups sliced apples
3⁄4 cup brown sugar
• Arrange sausage in buttered casserole dish and spread apples evenly over them.
• Sprinkle sugar on top.
• Bake 350 degrees for 25-30 minutes.
• Baste once or twice while baking.

Professional baseball’s unwritten but ironclad code of racial discrimination had kept Robinson and other African-Americans out of the majors since the 1880s. -
